Afghan Style Kadoo Borani (Squash with Yogurt)
A cheerful and versatile Afghan recipe for paid subscribers
This is similar to the borani banjan (eggplant with yogurt) recipe on the blog but the flavor of the pumpkin transforms it into a completely different dish. I have adapted it from the beautiful Afghan cookbook, Parwana: Recipes and Stories from an Afghan Kitchen, by Durkhanai Ayubi. I have mentioned in the newsletter before but if you have any interest in Afghan food (I personally love it), this is a must-have. Ayub details the history of her family, and Afghanistan with great care, and the recipes are diverse, accessible and delicious. This specific dish I make the most because squash is the one vegetable I can consistently find in Manila, and it pairs easily with many Pakistani dishes with a side of roti.
